Basic information:
Oolong tea combines the properties of green tea and black tea. Most Oolong teas, especially those of fine quality, involve unique tea plant cultivars that are exclusively used for particular varieties. Unique process including withering the plant under the strong sun and oxidation before curling and twisting. The degree of oxidation can range from 8 to 85%, depending on the variety and production style. One last step, baking or roasting, is exclusive to oolong tea and is referred to as the real art in making this tea. Different varieties of oolong are processed differently, but the leaves are usually formed into one of two distinct styles. Some are rolled into long curly leaves, while others are 'wrap-curled' into small beads, each with a tail. Different styles of oolong tea can vary widely in flavor. They can be sweet and fruity with honey aromas (medium fermented), or woody and thick with roasted aromas (heavy fermented), or fresh with flowery bouquet of aromas (low fermented). Tea production in Fujian is concentrated in two regions: Wuyi Mountains and Anxi County. Both are major historical centers of Oolong tea production in China. The most known Oolong is popular with tea connoisseurs and in the Fujian Province preparation process is known as the Gongfu tea ceremony. The processing of TieGuanYin tea is complex and requires expertise. Even if the tea leaf is of high raw quality and is plucked at the ideal time, if it is not processed correctly, its true character will not be shown. This is why the method of processing Tieguanyin tea was for a centuries kept a secret.
