Jin Jun Mei is an extremely famous black tea from the Wuyi Mountains in Fujian Province in eastern China. A traditional tea master produce this well-tended, high-quality tea leaf into an elegant, deeply-flavored finished tea that quickly attains world-class status. The tea is processed by hands using a method similar to that used to produce Lapsang Souchong, but without smoke braising. It is made from two small shoots plucked in early spring from the plant's stem. For a kilo dried tea required many thousands fresh shoots. That is why the tea is so expensive. Careful withering, hand-rolling, and firing of this leaf brings out the wonderful flavours that the terroir of the mountains of eastern China have for the tea bushes that thrive there. Characterized by tender with a slight twist, medium-sized leaves, when brewed, Jin Jun Mei is very beautiful clear and golden yellow to bright reddish in colour with an amazing floral, fruity and honey taste with a long lasting sweet after-taste. 

Ingredients: 100% Jin Jun Mei black tea

Classic: 2 to 3 grams, 200 mills of water at around 95+ C degrees, 3 to 5 mins depend on preferences. Infuse with boiling water for up to 3 minutes if you want your tea stimulating and energizing; 3-5 minutes if you want it to have a soothing and relaxing effect.

After you have finished brewing, take the leaves out of the cup/teapot – if they remain in the water too long, they start releasing tannins. Tannins makes tea taste bitter, inhibits absorption of magnesium and iron which are necessary for the body to function properly.
