Long Jing, Dragon Well is one of the China's most popular tea. The tea has over 1200 years of history. In Chinese culture Dragon Well is looked upon as an excellent gift as once it was a gift to special dignitaries and emperors. The tea was only plucked once a year during March and April before the Clear Light Festival. It was carefully picked and processed completely by hand from hand picking to hand roasting. It is well known for its “four wonders”- beautiful flat-leaf appearance, pleasant jade green colour, aromatic flavour and mellow taste. Dragon Well was the tea served to Richard Nixon during his famous meeting with Mao Zedong. Moreover, it was awarded a “Gold Palm” Medal—the top honour—at the 27th World Food Selection held in Athens in 1988.
Our Long-Jing tea is grown near the Hangzhou town, Zhejiang province over Xi Hu lake (West Lake). Here is no industry at this region, environment is clean, free of pollution where water is fresh, crisp and sweet. Tea master realizes the importance of environment: there would be no quality without the traditional respect for Nature. Our tea is hand plucked during very short period of March and April before the Clear Light Festival. The only difference is last stage: our tea is processed by equipment that mimics this hand rolling and roasting action. The tea still possesses the same characteristics and properties as hand-made Long Jing but we can offer it to our customers at unbeatable, the most competitive price. Brewing tips:
Classic: 2 to 3 grams, 200 mills of water at around 75 C degrees, 1.5 to 3 minutes depend on preferences. Higher temperature (up to 85 C degrees) equal more astringent taste.
Subsequent: 5 to 6 grams of tea, 80 to 100 mills 75 C degrees water, first brewing up to 30 second and each next longer about 20 second or even less. Leaves will infuse liquid with each brewing with different layers of taste. We recommend up to 5 repetitions.
The tea can be brewed very differently and there are many combinations that yield interesting results, but it is important to remember not brew it using to high temperature of water. It will get out the sweetness and aroma of the tea without any bitterness. Do not exceed 80 C degrees.
All brewing tips is a guidance only. The best is experiment to find own way depend on preferences.
